Not necessarily, especially when chipped, fried or roasted. And a little dependant on how much butter amnd salt is involved

What's inherently unhealthy about roasting a raw vegetable (unless you soak it in something unhealthy as part of the process)? I was under the impression that roasting retained more vegetably goodness than boiling. Martin

Nothing is inherently wrong, the problem is more with the oil or fat used in the roasting. You can roast vegetables without putting anything on them, and there are healthy vegetable oils that are widely used these days if you feel the need in order to get the desired surface effect. Martin

You can also do a nice healthy jacket potato in the microwave. Much better than boiling it to death. Martin The best way to do a jacket is stick it in an oven, at about 200/gas 6, for an hour, turn it and the leave for another hour. Lovely crispy skin and soft inside. None of this microwave mucking about. A good proper jacket needs time taken. And preferably lots of butter
