I agree, and without getting into specifics or spoilers, The Mandalorian appears to have nothing to do with the Skywalkers (at least going by what I have seen of it). Neither did the original movies really have that as a main thing: Lucas didn't decide that until he came to make the Prequels and the Sequel makers bought into that in, er, a confused way.
The Mandalorian appears to be off doing its own thing. References to other SW stuff are very subtle and don't require the viewer to 'get' them. It's more like a show set in the same universe as the films rather than tying into them as such.

True true. Prior to Ep9, we had Rey as a complete nobody. It was a masterstroke by Johnson. For too long Hollywood has had lazy connections between characters forced in to sequels where the original conceit didn't. (It's possible that Vader/Luke and Luke/Leia popularised this trope, and but in most cases it's lazy writing) You could argue that with Star Wars' 'poetry' on themes that Lucas added this legitimises the connections to prior characters, but to have the reveal in 8 was a total shock.
The issue was then the denial to the theorists of Reys origins. Was she a clone? Was she Lukes secret daughter as Luke and Leia had been hidden before her? No! And the mass populace were dissatisfied. So Disney compound their mistakes in Ep9.

Considering how audiences tired of Star Wars films coming out so close together, I must admit my reaction to ten new Disney Plus series being announced, including a "crossover event" with The Mandalorian did make me go: "Oh fuck off!".
When will they learn? Star Wars works when it's an *event*.

At cinema maybe. Though I think quality and variety was more the issue.
But personally, the decade when we got 12-20 episodes a year of Clone Wars and Rebels was fantastic. If the guy responsible for that is in a position to give us 24 episodes a year of Mando/Ashoka/New Republic alongside Favreau and the host of great writers and directors that they've been able to get on Mandalorian then Im not gonna complain. Plus however much Bad Batch they make.
The rest sound more like one offs and likely spread over a few years so Im not expecting to be overwhelmed.

Watching the sequel trilogy for the first time back to back and.. oh boy!
Having not watched The Last Jedi since cinema I had forgotten that my main complaint wasn't that it was bad or even different, but just how much it ignored the obvious sign posts in the Force Awakens. It retroactively makes TFA worse.
In TLJ timeline, Rei, the Falcon and the map to Luke all just happen to be on Jakoo. It just makes everything....... so... uh!
Oddly I dont think ROS does anything to help on that particular point, but I'll see when I get on to it.

Finally read the Trevorrow script for Episode 9
So much better than RoS, and makes a lot more sense. Some clunky AF dialogue that would need fixed, but overall thrust of the story was so much better.
